Steak Slovaki Wraps
Serves 1
Ingredients
100–150g scotch or eye fillet steak
2–3 small souvlaki wraps
Tzatziki:
3 tbsp Greek yogurt
¼ cucumber, finely diced
2 tbsp fresh parsley, finely chopped
Salt and pepper to taste
¼ lemon, freshly squeezed
Tomato Salsa:
½ cup cherry tomatoes, finely diced
1 tbsp red onion, finely diced
½ tsp dried oregano
Chips:
1 potato, peeled and washed
Olive oil, salt, and pepper to taste
Method
Prepare the chips:
Cut the potato into even chip shapes. Toss with a drizzle of olive oil, salt, and pepper.
Air fry or bake in a preheated oven at 200°C for 15–20 minutes, until golden brown and crispy.Make the tzatziki:
In a bowl, mix together all the tzatziki ingredients until well combined. Set aside.Make the tomato salsa:
Combine all salsa ingredients in a small bowl and set aside.Cook the steak:
Season the steak with salt and pepper, then cook in a hot pan for 3–4 minutes on each side (or to your liking).
Let it rest for 5 minutes before slicing into thin strips.Assemble the wraps:
Spread 1–2 tsp of tzatziki on each wrap. Add steak strips, a few chips, and a spoonful of tomato salsa.Serve:
Finish with a fresh lemon wedge and enjoy
