Steak Slovaki Wraps

Serves 1

Ingredients

  • 100–150g scotch or eye fillet steak

  • 2–3 small souvlaki wraps

Tzatziki:

  • 3 tbsp Greek yogurt

  • ¼ cucumber, finely diced

  • 2 tbsp fresh parsley, finely chopped

  • Salt and pepper to taste

  • ¼ lemon, freshly squeezed

Tomato Salsa:

  • ½ cup cherry tomatoes, finely diced

  • 1 tbsp red onion, finely diced

  • ½ tsp dried oregano

Chips:

  • 1 potato, peeled and washed

  • Olive oil, salt, and pepper to taste

Method

  1. Prepare the chips:
    Cut the potato into even chip shapes. Toss with a drizzle of olive oil, salt, and pepper.
    Air fry or bake in a preheated oven at 200°C for 15–20 minutes, until golden brown and crispy.

  2. Make the tzatziki:
    In a bowl, mix together all the tzatziki ingredients until well combined. Set aside.

  3. Make the tomato salsa:
    Combine all salsa ingredients in a small bowl and set aside.

  4. Cook the steak:
    Season the steak with salt and pepper, then cook in a hot pan for 3–4 minutes on each side (or to your liking).
    Let it rest for 5 minutes before slicing into thin strips.

  5. Assemble the wraps:
    Spread 1–2 tsp of tzatziki on each wrap. Add steak strips, a few chips, and a spoonful of tomato salsa.

  6. Serve:
    Finish with a fresh lemon wedge and enjoy
