Choc-Chip Berry Muffins

Ingredients

* 1 1/2 cups oat flour (blended rolled oats in processor)

* 1/2 cup rolled oats

* 1 tsp baking powder

* ½ tsp baking soda

* Pinch of salt

* 1 tsp cinnamon

* ½ cup native sweetener

* 2 large eggs

* ½ cup Greek yogurt

* ¼ cup olive oil

* 1 tsp vanilla extract

Add-ins:

* 1/2 cup frozen mixed berries

* ¼ cup sugar-free dark chocolate chips

Method

1. Preheat oven to 180°C and line a muffin tin with paper cases or lightly grease with oil.

2. In a large bowl, mix the oat flour, rolled oats, baking powder, baking soda, salt, cinnamon & Natvia.

3. In another bowl, whisk together the eggs, Greek yogurt, oil and vanilla until smooth.

4. Pour wet ingredients into the dry ingredients and stir gently until combined.

5. Fold in the mixed berries and chocolate chips.

6. Spoon the batter evenly into muffin cups.

7. Bake for 20–25 minutes or until golden and a toothpick comes out clean.

8. Cool in the tin for 5 minutes, then transfer to a wire rack.

9. Drizzle with extra melted chocolate (optional, but worth it).
